Glazed Pumpkin Chocolate Chip Cookies

The recipe to these cookies was given to me by a sweet friend a few years ago.  She had brought them as a snack to share for a book club that Meg and Grace were participating in at that time.  :)  My dear friend who hosted the club sent a few cookies home with the girls for me.  I took one bite and was in heaven, heaven I tell you!  These are so delicious--the secret is the chocolate chips and the glaze.  A heavenly (that word again!) combination.

Pumpkin Cookies

1 cup sugar or honey

1 cup canned pumpkin

1/2 cup shortening or butter or expellier pressed coconut oil

1 large egg

2 cups flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup chocolate morsels (or raisins if you prefer--I choose chocolate over raisins anytime)

Preheat oven to 375 degrees.  Mix sugar, pumpkin and shortening.  Add egg.  Stir in flour, baking powder, baking soda, cinnamon and salt.  Stir in raisins or morsels.  (I do all this in my kitchenaid).

Drop dough by teaspoonfuls onto ungreased cookie sheet.  Bake until light brown 8-10 minutes.  Immediately remove from cookie sheet and cool on rack.  Spread with light brown glaze. (see below)  Makes about 4 dozen smallish cookies!

Light Brown Glaze

1/4 cup butter

2 cups powdered sugar

1 teaspoon vanilla

2 tablespoons milk

Heat butter in 1 1/2 quart saucepan over medium heat until delicate brown.  Stir in powdered sugar and vanilla.  Stir in milk until smooth.  Remove from heat and spoon over each cookie immediately.  You can reheat the glaze if it starts to thicken/harden before you finish with all the cookies.  :)
